Parker's playing allows for the start and end of phrases with great freedom, and his sense of rhythm is truly impressive. If you just listen to the saxophone, it's hard to tell where the first beat is. Having it written out on sheet music makes it much easier to understand.
It's difficult, but I think it can be very helpful just to find out what notes are used and what rhythm is used.
